The tune Rat Cheese is better known as Pike's Peak.  Apparently there is some precedent for calling it Rat Cheese, which is likely a corruption of the name Natchez.  This tune is of moderate difficulty, but is well worth the effort to master.  It goes up to a high D in the B part.  I actually wanted to learn this tune some years ago, but couldn't find a compelling version at that time.  This version is quite compelling!
